Too hot to handle. August 12, 2012

It’s hot, it’s humid, it’s horrible. But we still have to eat. What’s your favorite hot-weather meal?

1. fried chicken (or fried fish or fried seafood), coleslaw, hushpuppies or fries

2. pulled pork (or your favorite barbecue), fried okra (or fried green tomatoes or fries), watermelon or cantaloupe

3. fajitas, Mexican-style roasted corn, chips and salsa or nachos

4. burgers, corn on the cob, veggie kabobs, salad

5. BLTs, fries, and salad

6. pizza and salad (or pizza, wings and salad)

7. barbecue, pasta salad or mac’n’cheese, and baked beans

8. falafel sandwiches, pita and hummus, Greek salad

9. Caprese salad (tomatoes, basil and fresh mozzarella) with whole-grain bread and olive oil/herb dipping sauce

10.  broccoli, carrots, cherry tomatoes, cauliflower, and scallions with plenty of hummus for dipping, followed with fresh fruit

11. a fresh fruit platter (pineapple, watermelon, cantaloupe, strawberries, grapes, honeydew, kiwi, blueberries, etc.) or a big fruit salad

12. a big bowl of hot, buttered popcorn and a nice cold beer

13. Chinese takeout

14. Subway sandwiches and chips

15. grilled veggies and rice with corn, black bean, tomato and cilantro salad

Yup. I’d go for dal, rice and tomatoes too.

I say 10 or 11. I would modify #10 – no hummus. Without the hummus, 11 becomes part of 10 for me.

I prefer a nice Italian tomato salad: tomatoes, green peppers with hot bell peppers in extra virgin olive oil. Season it with fresh garlic, basil, rose mary and oregano. After allowing it to sit, dip your nice Italian bread into a bowl of this deliciousness and enjoy. Throw in fruit (on the side) and you have a GREAT meal!

I can’t even fathom it being hot at the moment. We are lucky to get up to 10C in the day at the moment and so its hearty winter food all round for us. Ask me in 6 months time and I will gladly share my answer 😉

Hey Fran! Have you tried my Luverly Lentil Stew? (If not, type in the name in my search bar at upper right.) It’s the perfect warming winter fare. Serve with warm bread or cornbreead and salad and you’ve got a meal!

I definitely vote for #11! Although if it’s a fruit salad it needs a good mix – it can’t be mostly watermelon with a handful of grapes thrown in.

Ha! Frankly, I’d love just plain watermelon with salt, as long as it was well chilled, Jennie! But that’s just me.
